I learned all of this in 8th grade, where my Geometry teacher showed it all to us.. while dealing cards from a deck that we shuffled to demonstrate math and geometry problems. he also put himself through Boys Town, and College working as a dealer. There are no odds better than the house odds, and a few thousand years of gambling has weaned out the games of pure chance.
