There's apps / utilities out there that'll let you mount an ios device and copy stuff into/out of it. Windows Explorer might even do that without additional utilities. Mac side, "iexplorer" is adequate.

I think that if I can actually get my Windows machine to boot again I can probably get iTunes to recognize that iPad without wiping it. But the last round of Windows updates (which was months and months ago) I ran on the computer hosed it into an infinite reboot cycle.

Aha! Turns out my Ubuntu machine was able to read the PDFs just fine!
