Just because every time I don't put something like this on Flutterby, I run across someone posting the meme and wish I could easily find the counter: Phil Plait at Bad Astronomy: No, Thats NOT What the Earth Would Look Like Without Water:
Thats not at all what it shows. What it actually depicts is the Earths geoid: a way of describing Earths gravitational field. The original graphic is a product of the MATLAB package described by Ales Bezdek (credits at that link). Here it is in all its knobby goodness:
