This is pretty cool: Why 'The Mandalorian' Uses Virtual Sets Over Green Screen | Movies Insider. They shoot in a space with walls that are LED screens, and reproject the sets on to the inside of that space from the tracked camera location.

So no green-screen light spill, the actors get to see some notion (even if distorted by the projection for the camera) of what the background and environment actually looks like, and they're using a game engine for projection, so they can move things around in real-time...
