Probably should have removed the fruit

Probably should have removed the fruit pulp from this plum wine two weeks ago, but I'm getting to it now, and it smells amazing.

When I was making fruited meads, I found that leaving the mead on the pulp / lees didn’t have much of a bad effect on the finished product. It might mean I would have to let it age longer to get rid of the flavors from the pulp and lees, but once I did that, the drink was still good.

So my take is that you may have delayed having a final product a bit, but two weeks, plus maybe an extra month of aging isn’t all that much. I expect it’ll be fine, and you might even get some extra complexity in the finished product for it due to extra tannin extraction from the pulp (more on that thinking in Clark Smith’s Postmodern Winemaking if you’re interested).

Na zdrowie!
