Square makes a little credit card reading dongle that plugs into the headset jack on a cell phone.

I haven't found anything definitive on how they get the signature yet, but one commenter said

Tech Crunch: What a Square receipt actually looks like (not sure where in the process they're getting the signature).

I think the other thing that's cool about this is that this is a step towards those online receipts that I asked for.
