Well, there's a bit of a surprise: same mic and interface (Zoom H4n built-in), Audacity using 32 bit floats, Logic Pro using whatever it defaults to, it sure seems like Logic sounds a lot better and isn't doing some sort of squelching...
And Logic's EQ to fall off some of the hiss sounds *way* better, even through this MBP's speakers.

And the brand conflation between Zoom the maker of audio electronics devices and Zoom the conferencing software folks makes this even worse....

Zoom and audio have been my personal pergatory lately. Zoom live performance mode 
likes 48kHz instead of 44kHz, and sometimes does magic to quiet periods, cranking 
up the gain real high. Other artifacts come from their phone call in bridge and 
various carriers and phones codecs. Because some people call in using a land line 
or mobile into Zoom presentations. Aaaaargh!
