Apologies for the outages. I recently switched to PostgreSQL 8.1, and at some point in the middle of the night weird things are happening, and it's dying.

PostgreSQL can, depending upon configuration issues it seems, memory leak to lock-up stage. Joe at work has spent some serious time tuning/tweaking it to keep it from happening. are you pooling persistent connections?
